Orange Almond ‘Aromatherapy’ Cake

Unbelievably, I recently made this cake 3 days in a row and had rave reviews at each event! The recipe is versatile, gluten-free, low glycemic, easy, moist, flavourful and a star at any gathering. I have nicknamed it “Happy Cake”. Because the oranges boil for 2 hours my friend named it ‘Aromatherapy Cake’ as it leaves the house with a beautiful orange scent.

2 large or 4 small oranges (ideally organic)

2 cups blanched Almond flour

4 eggs – large size

1 tsp Baking soda

½ tsp sea salt

¾ cup honey

Wash oranges and put them (peel and all) in a stovetop pan, cover with cold water, bring to a boil then reduce to simmer for 2 hours. Check periodically to ensure there is still water in the pan.

Once finished boiling, pour out remaining water and let oranges cool slightly.

Set oven to 375°F

Grease 9-inch springform pan.

Place boiled oranges (peel and all) in a food processor, blend until smooth, then add in eggs, honey, almond flour, salt and baking soda until well combined.

Pour in springform pan and bake for 40 – 45 min, until a toothpick stuck in the centre comes out clean.

Cool in pan for 2 hours – Enjoy!

I used traditional butter cream icing for a birthday party, dusted icing sugar to dress it for a small gathering, topped it with fruit for a breakfast event and have enjoyed it ‘naked’. You could consider adding a pinch of cardamon, some cocoa powder, or a light glaze to switch it up.
